This sandwich was SO easy to make and literally so delicious. I have always loved egg salad and this is even better! I didn’t really use a recipe. I just mashed up a can of chickpeas (after rinsing them), added some chopped up dill pickles, two tablespoons of mustard, and two tablespoons of vegenaise, a sprinkle of dried dill (fresh dill would be SOOOO good) and then mixed it all together. Then I toasted some vegan bread and made a sandwich with the chickpeas and mixed greens I had in the fridge. Mmmmm, delicious!
