This weekend I went to Spokane, WA to visit family. We went out to a super adorable cafe called Boots Bakery & Lounge. It just so happens to be vegan! I was so so excited to try out a vegan bakery as I never have before, and I was not disappointed. In fact, you could say I was quite shocked at how extremely delicious the desserts were there. I got a chocolate cupcake with peanut butter frosting, a coconut cupcake, and a carrot cupcake. All three were fantastic, but I have to say the chocolate peanut butter was my absolute favorite. The no-bake cookie was really good as well. And the waffle. Oh my word. My sister told me I HAD to try their pumpkin spice waffle and she was right. It was out of this world good. I can’t really explain in full how good this bakery was, but seriously… If you are ever in Spokane, WA you simply MUST stop by Boots!
