I purchased Gordon Ramsay’s Healthy Appetite cookbook a while back, and this recipe was by far one of my favorites. The thai dressing is soooo good. I omitted the shrimp and coriander leaves (the latter because I didn’t have any). I replaced the two tablespoons of fish sauce with two tablespoons of soy sauce, and used only one tablespoon of the sugar (I used coconut sugar). I didn’t bother with using light soy sauce either. The dish turned out great with all of the adjustments I made. In fact, I think I liked it better this time around than when I made it before I was vegan. So if you like asian food, definitely try out this recipe.
