A Waffle Kind of Morning

I love waffles. I don’t always feel like eating them though, because they make me feel sluggish and sick to my stomach — at least normal waffles do. I found a low fat recipe for vegan waffles on youtube and they turned out so delicious (in case you would rather see the recipe instead of watching a video, I typed it out below). And the best part about it all is that I felt super energized after eating them! You have to try making these if you were in the same boat as me. I like to drink lemon water in the morning too. It makes me feel like my body is getting cleansed or something. Haha, that is probably not very accurate but whatever floats your boat, right? (I don’t know what is with all my boat references this morning….) And I just had to show off my new mug!! I absolutely love it. It reminds me of spring and everything fresh and delicious and whimsical. Okay… I am going to stop now. I am in quite a strange mood. Anyways the point is try out these waffles!! I topped mine with a few banana slices and a strawberry sauce I made by heating and mashing up some frozen strawberries in a saucepan. And of course I drizzled a cap full of maple syrup over my waffle too! This recipe makes two waffles. I ate them both. I regret nothing. 😀

Low Fat Waffle Recipe

1 cup oats, blended into flour

1 ripe banana

3/4 cup non-dairy milk (I used almond)

1/4 tsp baking powder

1 tsp vanilla extract

cinnamon, to taste

stevia drops, to taste

coconut oil, for greasing waffle maker

Blend the banana, milk, baking powder, vanilla extract, cinnamon, and stevia drops until smooth. Add the wet mixture to the oat flour and mix until fully incorporated. Grease waffle maker with coconut oil (DO NOT FORGET THIS STEP OR YOU WILL END UP WITH A HUGE MESS) and add batter to pre-heated waffle maker. Top with anything you like! Enjoy!
