It’s been a long hard week with school starting again, and this weekend it’s been super smoky from the numerous wildfires raging in the pacific northwest. It is finally raining, which I am super happy about, but I’ve just been feeling super gloomy and sad lately. It sounded cozy and comforting to put on my robe and make vegan cookies, so that is exactly what I did. This recipe is so very good if you like moist crispy cookies.
