Today at the farmer’s market I got to try an Egyptian dish called Kosheri (or Kusheri). It is one of the most popular Egyptian dishes according to the stand I got it from, and I was so delighted when I saw that it was vegan! One of the reasons I love my local farmer’s market so much is that most vendors willingly accommodate vegans/vegetarians and people with gluten allergies. I found this recipe, which from the picture looks quite similar to what I had. I will definitely give it a try some time! If you happen to try it out before me, let me know how it goes!
