This recipe for vegan sour cream is delicious. It’s thick and creamy, and perfect for a veggie dip or to put on tacos. The recipe is from hot-for-food, but I typed it out below if you would rather not watch the video. Tacos are probably my all time favorite meal. I honestly think they are delicious with or without sour cream, but this was a fun way to mix up a meal I eat a lot.
Sour Cream
1 cup cashews, soaked for 3 hours or overnight
1/2 cup original almond milk
2 tbsp lemon juice
1/2 tsp apple cider vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp white pepper
Blend all ingredients in a high speed blender until creamy and smooth. Note: I think leaving out the garlic and onion powder next time would make for a more traditional/plain sour cream taste.
