Guacamole

I know I post a lot of mexican food recipes, but tacos really are a staple of my diet. I love white rice tacos, black bean tacos, rice and black bean tacos, refried bean tacos, potato tacos — I pretty much like any type of meatless taco. You can even add a cheesy flavor to your tacos by sprinkling some nutritional yeast on them. But the salsa and guacamole are what make tacos really explode with flavor. Today I didn’t have any of my homemade salsa left, so I just used some store bought pace salsa. I did make some homemade guacamole though! Mmmm!!!!!! It was so very tasty. I didn’t use a recipe because I know what I like, but I typed out basically what I did below. And aren’t those like the tiniest corn tortilla shells you’ve ever seen?! I think they are so adorable!! 😀

Guacamole Recipe

1 ripe avocado, mashed

1/4 large lime, juiced

1/2 small red onion, diced

1 tomato, diced

1/2 jalapeño, diced

1 tsp cumin

1/4 tsp garlic powder

1/4 tsp salt

Mix all of the ingredients together. Note: The spices I added are simply what I like and the amounts I wrote down are just a starting point. Add them to taste. You can add any other spices you like as well.
