I cannot even express how much a love avocado toast. Before I went vegan, I was hesitant because all I ever saw vegans eating for breakfast was fruit. I love fruit, I just do not feel good when that is all I eat for breakfast. Then I discovered avocado toast, and EVERYTHING changed. Avocados are the one source of fat that not only does not make me feel gross, but actually makes me feel amazing. I highly recommend eating avocado toast if you are new to veganism and miss eggs. I never really liked eggs all that much because they are so gross smelling and have a weird texture, but they always did fill me up in the morning. Avocados do the exact same thing, just without the animal cruelty. 😀 Oh, and the pomegranate seeds?! Simply to die for.
