I used the hot for food recipe for the lime chipotle dip that I drizzled over my french fries. I was able to cut my potatoes into uniform fries with my new mandolin slicer! Wow those things work wonders. All I can really say about this recipe is that it was fantastic. I also tried making pea guacamole. If you don’t like peas, I probably would not recommend that you make this recipe. It does have a noticeable pea taste, but I was surprised by the fact that I actually kinda liked it. I hate peas, so that is really saying something. This was the perfect meal for a lazy Sunday afternoon.
Chipotle Lime Fries (from hot for food)
1/2 cup vegan mayo
1 tbsp sriracha
1 tsp onion powder
1/2 lime, juiced
Mix all of the ingredients together. Drizzle over baked fries.
Pea Guacamole
1 avocado
1 cup frozen peas, thawed
1 small onion, roughly chopped
1/2 cup cilantro
2 tomatoes, diced
1 large lime, juiced
1 tbsp cumin
1 tsp garlic powder
salt and pepper to taste
Pulse all of the ingredients except the tomatoes in a food processor until incorporated. Transfer to a bowl and mix in the tomatoes.
