After making Ratatouille the other week, I had some left-over zucchini and egg plant. I decided to make little pizza bites with them! After I sliced up the zucchini and eggplant, I topped them with tomato sauce and vegan mozzarella. The recipe for the mozzarella can be found here. I made some with basil (I had to use dried basil because I didn’t have any fresh), some with pineapple, and some with mini peppers. I just think they are so adorable and super easy to make. You can even use store-bought vegan cheese or ditch it altogether. Honestly, I don’t really like vegan cheese. The one I made for these was okay, but there is something about tofu that is just really upsetting to my tastebuds. Maybe it will grow on me?
