Gourmet Portobello Mushroom Panini

I was inspired by one of the vegans I follow on Instagram to make these paninis. She posted a photo of a sandwich she got from a place called Aroma Espresso Bar and it looked so delicious. The sandwich had grilled portobellos, alfalfa sprouts, guacamole, fresh basil, a sun dried tomato spread, and was made on whole wheat bread. My mouth was literally drooling when I saw the post and I decided I had to make a sandwich like the one pictured. I set off to my local food co-op to get their delicious whole wheat bread, and purchased some avocados, portobello mushrooms, alfalfa sprouts, and fresh basil as well. Check out the recipe below if you would like to make these! These tasted amazing!! This was quite literally the best panini I have ever had.

Portobello Mushroom Panini

1 large portobello mushroom, sliced

1 tsp olive oil

1/4 onion, sliced

1 large clove garlic, diced

salt and pepper, to taste

2 slices whole wheat bread

1/2 avocado, sliced into thin strips

sun dried tomatoes

alfalfa sprouts

fresh basil

Heat up the oil in a saucepan and add the onion and garlic. Sauté on medium-high for about five minutes, then add the mushrooms. Cook the mushrooms until done (and add salt and pepper to taste), then set aside. Fan the avocado onto a piece of your whole wheat bread. Add the sun dried tomatoes, basil, and other piece of bread. Place the sandwich on a panini press and grill as desired. Once the panini is done grilling, add the sprouts and mushrooms. Cut the sandwich in half and consume immediately!
