I thought I would start to post (a few) quick and easy vegan meal ideas. Most of my posts are from more-or-less complicated recipes I make over the weekend. The thing I love about vegan food is that it doesn’t have to be complicated. It can actually be the simplest way to eat. Pictured above is a typical lunch I will bring with me to the university. It really is one of the most simple and delicious meals I eat. All you need is a can of your favorite kind of beans (I love black beans), salsa (find my recipe here), half an avocado diced up, and your favorite type of rice pre-cooked (I used basmati rice). Pack a fork and some greens or tortillas if you want and you have yourself a super easy lunch that takes five minutes to make and tastes AMAZING.
