A friend of mine and I decided to make brownies last weekend. They turned out super chocolatey and delicious. If you like chocolate or brownies, you will love these. I found the recipe for these beauties here. Eating them with fruit to balance out the richness is a must (in my opinion)! Just in case you are too lazy to click the link, I typed up the recipe below. Also, if you do not like coconut you might try replacing the coconut oil with any sort of vegan butter.

Vegan Brownies

1/2 cup coconut oil

3/4 cup chocolate chips

1/2 cup cocoa powder

1 cup granulated sugar

1/2 cup unsweetened almond milk

2 tbsp hot water

1 cup flour

mini chocolate chips (optional)

Preheat oven to 350 degrees F and grease an 11 by 7 pyrex pan with coconut oil or vegan butter. Melt coconut oil and chocolate chips together. Stir in the cocoa powder, sugar, milk, and water. Add in the flour and mix until just incorporated. Pour batter into your greased pan, then top with mini chocolate chips. Bake for about 30 minutes, or until the center of the brownies comes out clean (when a toothpick is inserted into it). Let cool and enjoy!
