


My local farmer’s market used to sell this amazing chickpea stew dish over rice, but the booth that sold it is no longer there. I was craving it the other day, so I looked up Moroccan chickpea soup recipes to get some ideas. Then I basically just threw a bunch of things I like into a pot and cooked it up. This recipe is super easy, hearty, and cheap!
Chickpea Stew Recipe
Ingredients
1/2 onion, diced
3 large cloves garlic, minced
2 tbsp cumin
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 can chickpeas, drained
1 can diced tomatoes
2 cups vegetable broth (or more if desired)
2 cups kale, chopped
1/4 cup cilantro or parsley
kosher salt and freshly ground black pepper (to taste)
Directions
Sautee onions and garlic. Add the spices, stirring until fragrant. Add chickpeas, tomatoes, and broth. Bring to a simmer for 15 minutes. Mash chickpeas (for a thicker soup), then att the kale and herbs. Season with salt and pepper to taste, then serve with rice. Garnish with cilantro or parsley if desired.
