I ate this dish for lunch or dinner for about a week, and I never got tired of it. It is soooo good, super easy to make, and CHEAP. Basically I heat up a mix of (frozen) grilled veggies that I buy from the supermarket here in Florence (it has eggplant, zucchini, peppers, potatoes, and maybe a few more things), mix it in with some basmati rice and pasta sauce, and there you have it! A delicious meal. Filling and healthy.
