Chickpea Curry

This recipe was inspired by the Vegan Corner’s vlog channel. You can check out their video on easy $1 meals here. I made it even simpler than their recipe, just because I am lazy and have a small kitchen. I’ve been making this chickpea curry every Monday night while I have been in Italy. It is always better the next day because the flavors have really soaked into the chickpeas. Though the Patak’s curry paste adds some nice flavor into the sauce, it is not necessary. Also, feel free to add more spices if you so desire. I kinda always just throw stuff in the pan and hope it works out. Haha! Enjoy!

Chickpea Curry Recipe

3 cloves garlic, minced

1 small onion, diced

1 can tomato sauce

1 tsp curry powder

1 tbsp Patak’s curry paste (optional)

1/2 tsp spicy paprika

1 can chickpeas, drained

1 tbsp fresh coriander (optional)

salt to taste

Sauté garlic and onions in a pan until tender (you can do this in water or oil). Add in the spices, tomato sauce, and chickpeas. Let cook covered for 15 minutes on low heat. Serve over rice or with bread and veggies.
