I had some soaked cashews to use up and was delighted when I found this recipe. These mini cheesecakes are really really yummy! I think they will be perfect for the holidays! The original recipe by hot-for-food makes strawberry cheesecakes. Unfortunately, I was out of frozen strawberries so I used raspberries instead. Next time I will definitely try strawberry. For the fruit swirl topping, I had to strain the blended raspberries to get the seeds out. I think that is probably the only difference between the two recipes, other than the type of fruit used.
